Ali Shan 'Pearwood Mountain Oolong' is a Taiwanese tea grown at an altitude of over 2000 metres above sea level. It's one of the most rare and expensive varieties of the region.
A few decades ago on the slopes of Alishan laid pear and apple orchards, which were then replaced by tea plantations. The first tea bushes on these plantations were grown right under where the fruit trees used to be. Hence the name of the tea.
Characteristics
This is a partially fermented tea. This variety of tea is produced with modern manufacturing techniques, which saves the natural flavour and highly medicinal properties of the tea leaves. The most sought after varieties of this tea are harvested in early-spring.
Infusion - transparent olive hue.
Flavour - Light, with honeynotes.
Medicinal properties
From a medical point of view, it is a good natural tranquilizer, whilst it also lowers blood pressure and heart activities. It can relieve one's stress levels if taken when working or purely for enjoyment.
Brewing process
1. Brew in a Gaiwan or flask.
2. Pour hot water over all teaware to warm it up.
3. Put 5-7 grams of tea leaves per 100-120 ml of water.
4. Brew with boiling water 100 degrees and wait 15-20 seconds .
5. The first brew is merely designed to wash the tea leaves and should be poured out.
6. The second steep can be made after a few seconds to around 20 seconds, depending on one's taste. (The shorter the brewing time, the more steeps the tea can endure). This tea can be brewed up to 7-8 times.
