ORIGIN: The meat of Capra hircus and Oris aries [Bovidae].
CHEMICAL COMPOSITION: The lean meat contains 17.3 % of protein, 13.6 % of fat, 0.5% of carbohydrate, 15 mg% of calcium, 168 mg% of phosphorus, 3 mg% of iron, 0.07 mg% of thiamine, 0.13 mg% of vitamin B2, 4.9 mg% of nicotinic acid, 70 mg % of cholesterol. The constituents contained in mutton vary with the breed, age, nourishment and different parts of the body of a goat or a sheep.
NATURE, FLAVOR AND CHANNEL TROPISM: Sweet in flavor and warm in nature, acting on the channels of the spleen and kidney.
EFFICIENCIES AND INDICATIONS: Invigorating qi to treat deficiency syndrome, warming the middle-jiao and relaxing the bowels.
