Stewed Pork Liver with Scrophularia for Benefiting the Liver

INGREDIENTS
Scrophularia root,Radix Scrophulariae (Xuanshen)   15g
Pork liver  500g
Rapeseed oil, scallion, fresh ginger, soy sauce, white sugar, rice (or millet) wine, wet starch (right amount each)

RPOCESS: Wash pork liver clean and put it together with the scrophularia roots in an aluminium pan; add just the right amount of water and heat it for an hour, then take the pork liver out, cut it into small slices and put them on a plate. Put the rapeseed oil in a cooking pan, put in scallion and fresh ginger and stir-fry them a little bit; add a bit of soy sauce, white sugar, and cooking wine, put in just the right amount of the soup in which the pork liver has been boiled, mix the wet starch into the soup (to make it clear and transparent), then, pour it over the pork liver slices and stir to mix them thoroughly.
