ORIGIN: The fruit of Malus pumila [Rosaceae].
CHEMICAL COMPOSITION: Mainly composed of carbohydrate, most of which is sugar, and its content varies with genera: sucrose 4%, reducing sugar 6 to 9%. Among the acids it contains, about 0.5 % in all, are mainly malic acid, quinic acid, citric acid and tartaric acid. Of the fragrance it contains, 92 % is alcohols, 6 % is carbonyl compounds, and the other 2 % is esters, acids and so on.
